What’s the Difference Between Carolina and Central Texas BBQ?
Carolina barbecue—specifically Lexington (or Piedmont) style, which we’re showcasing—is all about pork, with a focus on pork shoulder and ribs. It’s paired with a thin, vinegar-based sauce, lightly mixed into the meat to balance the richness and cut through the fattiness. In contrast, Central Texas barbecue highlights beef, like brisket, and uses simple rubs, focusing on the meat’s natural flavors.
